The Best Peanut Butter Keto Cookies

Peanut butter cookies are definitely one of my favorite cookies. When I’m eating keto, I struggle with sugar cravings. I feel like all I want are cookies and pretty much anything sweet! That’s when I decided to make some cookies that are keto friendly and satisfy all of those pesky cravings!

These Peanut Butter Keto Cookies are easy to make and leave you with no guilt! I usually can’t stop at one! Instead of white sugar, just use monk fruit sweetener to make these keto. It adds just the right amount of sweetness.

Another thing about these cookies are the 5g of protein per cookie! I have to confess I have had these for breakfast! They are actually quite filling and satisfy those pesky cravings for sweets.

Ingredients to make Peanut Butter Keto Cookies:

  • All Natural Peanut Butter typically has peanuts and salt for the ingredients. Just check the label closely to make sure it has NO sugar added. I use the chunky peanut butter, but creamy will also work if you don’t like the peanut chunks.
  • Unsweetened Apple Sauce is the perfect substitute for butter in recipes. I actually don’t even miss the butter in this peanut butter cookie.
  • Monk Fruit Sweetener comes in a coarse sugar-like form form and add the perfect amount of sweetness with a very mild aftertaste. It is sweeter than sugar so you really don’t need as much as white sugar for recipes. I don’t really taste any after taste in these cookies.
  • Baking Soda puffs up these peanut butter keto cookies.
  • Vanilla adds a nice subtle flavor to these cookies.

Directions to Make Peanut Butter Keto Cookies:

  1. Preheat the oven to 350 degrees.
  2. Cover a baking sheet in parchment paper.
  3. Place All Natural Peanut Butter in a large mixing bowl.
  4. Combine all ingredients in the large bowl and mix well. Don’t over mix.
  5. Roll the sticky cookie dough into one-inch balls and place them on the baking sheet.
  6. Use a fork to press them flat.
  7. Bake for 8-10 minutes.
  8. Let them cool on the pan for 10 minutes before serving.

Common Questions Asked:

  • Can I use another sweetener besides Monk Fruit Sweetener? Yes you sure can. Stevia, xylitol and erythritol can all be used and allow you to stay keto! Try using the same amount as the monk fruit sweetener and taste the dough to see if anymore is needed.
  • Where can I buy Monk Fruit Sweetener? I usually buy mine from Costco or Amazon.
  • How do you store these cookies? Store them in an airtight container or ziplock bag.
  • Can you Freeze these cookies? Yes they freeze very well! They will stay good isn’t he freezer up to 3 months. Just set them on the counter to defrost an hour or so before you want to eat them.
  • Can you Freeze the cookie dough? Yes this cookie dough freezes well. I like to shape the cookie dough into round balls, place on a cookie sheet, then freeze. After the cookies are frozen, place them in a freezer ziplock bag to store for a longer time. To bake the cookies, pace the cookie balls on a cookie sheet to defrost and come to room temperature. Use a fork to make that signature peanut butter cookie design on the top and bake them.
