So, if you followed along with our food week last month, you might be noticing a trend…I’m kind of on a health kick. I’m actually embarrassed and excited to announce that I am officially down 20 lbs from January!! Woot Woot! I’m embarrassed only because I still have a long way to go! *shrugs*
I think we all can agree that all of the most successful diets are trending toward protein based, right? I absolutely know that protein is a MUST for me! I do my best to keep a good balance and balance HAS to include a Saturday morning pancake splurge! So, when I stumbled upon this little gem, I was SHOCKED that it was so packed with protein and still DELISH!
So ENJOY!
Ingredients:
1/2 cup oatmeal
1/2 cup cottage cheese
1 teaspoon vanilla
4 egg whites
Directions:
1 Mix all of your ingredients in a blender.
2 Spray pan with cooking spray and cook a few small ones at a time.
3 Top with your favorite pancake topping! My preference is raspberries and sugar free syrup!

Try adding 2tsp of baking powder. Extra fluffiness!!!!
How many servings?
At first, I was a little scared of cottage cheese in pancakes, but holy crap! These are amazing! And so cheap to make! I put a little jelly on top (raspberries are out of my budget, but that sounds so good!). Healthy college student approved!
