Easy and Healthy Lentil Vegetable Soup

This cold weather makes me want cozy socks, chunky sweaters and warm soup! If you like lentils you will love this warm and comforting lentil vegetable soup. It’s full of vegetables like carrots, spinach and onions. It’s also gluten free and vegetarian. My whole family loves this soup and they don’t even know it’s incredibly healthy.

Lentil vegetable soup is easy and relatively quick to make. It does need about an hour to simmer, but it’s sort of like a crock pot meal where you throw everything in and leave it. You can also make lentil soup with this lentil soup instant pot recipe.

The best word to describe this soup is hearty. I love the heartiness and how filling it is without being heavy and greasy. Only 350 calories per serving and it curbs your appetite. Unlike other soups, I never feel hungry after I eat this soup.

Tips and Tricks

  • If you would prefer less lentils and more broth, I would suggest cutting the amount of lentils in the recipe to 1 or 1 1/2 cups. That is totally up to you. I liked the amount of lentils though, so I’m keeping the recipe how I made it.
  • I prefer 1/2 teaspoon of salt for this soup, but you can omit it all together if your watching your salt intake. Or add more if you need it for flavor. The vegetables make a delicious broth flavor with a tomato undertone.

What are Lentils?

Lentils are apart of the bean family and they come in red, brown and green. They are a gluten free food and add a lot of protein to vegetarian meals. This lentil soup recipe contains two cups of brown lentils.

Dry lentils have a shelf life of 2-3 years when they are stored at room temperature. They make a great addition to any food storage. It is recommended to keep them in an air tight container.

  • Is Lentil soup good for you? Yes it is! Lentils are a GREAT source of protein and soluble fiber. WebMD says they have large amounts of protein comparable to the amounts found in red meats.
  • Do you soak the lentils before making soup? Lentils do NOT need to be soaked. Just rinse them before you add them to the soup.
  • Are Lentils good for weight loss? Yes! Lentils are packed full fiber and protein that can make you feel fuller longer. The slower digestion can curb your appetite and that can aid in weight loss.
  • Can you make this soup in a slow cooker? Yes you can. Sauté the onion in a large skillet until soft. Add sautéed onions, carrots, celery, garlic, and spices to the slow cooker. Add the lentils, tomatoes, bay leaves and broth to the slow cooker. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours. Before serving, stir in spinach and vinegar. Serve hot with rolls.
  • Do Lentils give you gas? Just like beans, they too can give you gas. Even though this recipe doesn’t require the lentils to be soaked in water, it can help with digestion if they are soaked. I only recommend soaking lentils for one hour before adding them to the soup. No need to soak them for 24 hours. Just one hour of soaking can help with digestion.

Instructions for Lentil Vegetable Soup on the Stove Top:

  1. In a large stock pot, heat olive oil over medium high heat. 
  2. Sauté the onion 3-4 minutes or until onions are translucent. 
  3. Add carrots, celery and garlic and sauté for an additional 3 minutes.
  4. Next add oregano, basil and bay leaves and stir.
  5. Add lentils, broth and tomatoes. Bring to a boil. Reduce heat, and simmer for 1 hour. 
  6. When ready to serve stir in spinach and vinegar, and season to taste with salt and pepper.
  7. Remove bay leaves and enjoy!

Ingredients

  • 1/4 cup olive oil
