I discovered Trader Joe’s years ago and when I found their yellow curry, I knew I found heaven on Earth! It has the perfect amount of heat and paired with the chicken and vegetables gives it the right amount of texture.
Thai Yellow Curry Sauce
Trader Joe’s has a variety of curry sauces: green, yellow and red. I’m a big fan of the yellow curry sauce. It’s not as think and sweet as some sauces I’ve tried, but I found the flavor to be just right. It’s got a light heat, deep savory flavor and a punch of onions and garlic. Pairing this sauce with the chicken and vegetables is the perfect meal.
This yellow curry sauce also makes a great base if you want to add any additional flavors like coconut milk, fish sauce or sugar.
Ingredients in Yellow Curry Sauce from Trader Joe’s
water, canola oil, sugar, dehydrated coconut milk (coconut, sodium caseinate), garlic onion, coconut milk, salt, contains 2% or less of” ginger, red chii, cornstarch, spices, cultured whey, onion and garlic powder, citric acid, cultured dextrose, inulin, natural flavor, xanthan gum.
What makes the curry yellow?
The yellow curry mainly gets its color from turmeric powder. It has a beautiful deep golden color that colors the dish.
How to Make Trader Joe’s Yellow Curry Chicken
- Start the cooking the Jasmine sticky rice in a rice cooker or instant pot.
- In a large skillet, heat 1 Tbsp of vegetable oil. Add chicken and cook for 5 minutes until all the pink is gone. Set aside.
- Heat 1 Tbsp of oil to the large skillet. Add vegetables, except the cilantro, to the skillet and sauté for 5-7 minutes.
- Add Trader Joe’s yellow curry sauce and cooked chicken into the skillet with the vegetables and turn heat to low.
- Cover and simmer for 5-10 minutes. Stirring occasionally.
- Serve with rice and top chicken with some fresh cilantro. ENJOY!
What can I serve with Curry?
With this curry, I love to serve it with jasmine rice on the side, but it is also delicious to serve the curry over a bed of the rice. Naan bread is also a perfect side for this dish.
Prep Your Meal Ahead
If you want an even faster way to make yellow curry chicken, prep the vegetables on the weekend to make for a quick evening dinner.
Cutting the vegetables will take the most time, but if you cut them up prior to dinner time, you can cut off at least 5-10 min of the prep time.

Ingredients
- 1 Tbsp Vegetable oil
- 1 lb Boneless Skinless Chicken Breast sliced into ½-inch by 2-inch strips
- 1 cup carrot peeled and cut into ¼-inch slices
- 1 cup potatoes peeled and cut into ¼-inch slices
- 1 1/2 cup Bell peppers Any color cut into ¼-inch thick slices (about 2 peppers)
- 1/2 cup Onion cut into ¼-inch slices
- 11 oz Trader Joe's yellow curry sauce
- 1/2 Bunch Cilantro
- 1 cup Jasmine rice uncooked
Instructions
- In a rice cooker or instant pot, start the jasmine rice.
- In a medium-large sized skillet, add 1 Tbsp of vegetable oil. Heat over medium heat until the pan is hot.
- Add chicken breast and cook for 5-6 minutes until the chicken is cooked through and all the pink is gone. Set aside.
- Add 1 Tbsp of vegetable oil to the skillet. Heat over medium heat until the pan is hot.
- Add vegetables, except the cilantro, and sauté over medium heat for 3 minutes, until tender.
- Add Trader Joe's yellow curry sauce and cooked chicken into the skillet with the vegetables and turn heat to low.
- Cover and simmer for 5-10 minutes. Stirring occasionally.
- Serve with rice and garnish with fresh cilantro.

Any clue if I can do this in a crock pot?
Yes you can absolutely do it in the crock pot. Just make sure to add enough liquid to warrant the time of cooking. I would consider adding a cup of water with the dish or extra sauce.
What would be the process and time for an instant pot version?
20-25 minutes on high, (frozen chicken) or 15-20 minutes on high, unfrozen

Loved this recipe! It wasn’t quite “saucy” enough for me so I added a half can of canned coconut milk to the simmer. Also added 2 jalapeño peppers in with the veg bc I like spicy! Probably adds to the calories but I live alone so it made 3-4 lunches for meal prep! Thank you loved it!

This was so excellent and easy! I sliced all the veggies with a mandolin. I used rotisserie chicken, added 1/2 cup chicken broth to make saucier and served over brown rice. I did need to simmer it all longer to get the potatoes cooked. Easy and delicious one pan meal!
