My family tends to make this recipe most in the summer time because you don’t have to heat up your kitchen to make it. But you can enjoy it all year long.

This is no restaurant Greek salad because it doesn’t have lettuce with a few scarce toppings. Instead, it uses all the toppings you love that are full of flavor as a base. That is how a traditional Greek salad was meant to be made. This Easy Greek salad recipe has a base of tomatoes, green peppers, cucumber, onion, olives, and feta cheese.

Keeping with the cooling effect of this salad, it has a handful of mint leaves. I was skeptical at first with these added to the salad, but I love the contrast it gives to the salty and sweet flavors of the veggies.

  • 2 cups cherry tomatoes
  • 1 garlic clove
  • 1 small green bell pepper
  • 5 oz feta cheese
  • 1 cucumber
  • ½ red onion
  • ⅓ cup kalamata olives
  • A handful of mint leaves
  • 2 tbsp fresh parsley

Dressing Ingredients

This is a simple greek salad dressing recipe consisting of 4 ingredients. It also works for a nice green salad. To make it, just whisk all of the ingredients together and your done. It’s really as simple as that!
