Roasted Pineapple and Habanero Shish Kabobs

I know I’ve mentioned this a few times, but my family and I just recently moved to a new city. This isn’t my favorite thing about my new location, but I am so delighted to now live a few minutes away from a Costco! The first few days we lived here my boys wanted to go to Costco just for samples, to which I happily obliged. So we filled our bellies with delicious little Costco samples for lunch two afternoons in row. Well, Costco sample specialists (I don’t know if that is an official title, but it should be) are brilliant. It’s like they can read my mind and know when I’m about to make a trip to their store and they pick all the samples of food that I will want to buy. So I always spend more at Costco, but I have found some pretty awesome food.

Last week I discovered (or Costco strategically made me discover) Robert Rothschild Farm Roasted Pineapple and Habanero sauce. They had it served on a cracker with a little cream cheese (heavenly!). The sauce is sweet with a little kick of spice. I wasn’t going to buy it, but then I thought how tasty chicken would taste marinated in this scrumptious sauce. So I grabbed a bottle. I made Shish Kabobs with the sauce and it was such an easy, delicious meal!

Everything I read online says you can marinate vegetables and chicken together for shish kabobs since you grill them and cook the veggies. I made mine on a George Foreman grill and was afraid they wouldn’t heat up as much so I marinated my chicken and veggies separately.

Ingredients:

2 zucchini; sliced lengthwise and chopped

1 bell pepper; chopped

8 oz baby bella mushrooms; cut in half

1 cup fresh pineapple; cut into chunks

12 cherry tomatoes

2 boneless, skinless chicken breasts, cut into chunks

2 cups Robert Rothschild Farm Roasted Pineapple and Habanero sauce

Directions:

Marinate chicken and vegetables in sauce overnight. (Do not marinate the pineapples.)

Soak your skewers in water for 30 minutes.

Add marinated chicken and vegetables and chunks of pineapple to the skewers.

Grill until chicken is cooked through and vegetables are soft.

Makes about 15 shish kabobs
