Our favorite Christmas cookies

Yeah, I didn’t think all of my posts through and I’m posting a recipe for Christmas cookies….the day after Christmas. These are actually good any time, but with the beautiful green mint chips they looks so festive on Christmas. I suppose you could make these on St. Patrick’s day as well.

This recipe came from the back of Guittard green mint chips bag.

Preheat the oven to 350* F. In top of a double broiler over low heat, melt 2 cups semisweet chocolate chips and 1/2 cup butter. I don’t have a double broiler, so I use a bowl over a saucepan. It works great!

Stir the chocolate constantly until smooth. Set aside to cool. In a small bowl combine 1 1/2 cup flour, 1/2 tsp baking soda and 1/8 tsp salt; set aside.

In a large bowl beat 3 large eggs, 1/2 cup sugar, and 2 tsp vanilla until light.

Blend in the melted (and cooled) chocolate. Then add your dry ingredients.

Stir in the mint  chips and then chill in the fridge for 10-15 minutes.

Your cookie dough will look really wet and sticky and you will be tempted to add more flour. Don’t do it! 🙂 It’s supposed to be that sticky. Bake for 8-10  minutes; cookies will be soft in the middle and will harden as they cool. I found 9 minutes to be perfect for me and my oven.

These cookies are amazing right out of the oven. They are so chocolatey and gooey and minty. And they are pretty!

Polka Dot Cookies

2 cups semisweet chocolate chips
½ cup butter
1 ½ cups unsifted flour
½ teaspoon baking soda
⅛ salt
3 large eggs
½ cup sugar
2 teaspoons vanilla
2 cups Guittard green mint chips

Preheat oven to 350* F.

In top of double broiler over low heat, melt semisweet chips and butter, stirring constantly until smooth. Set aside to cool. In small bowl combine flour, baking soda and salt; set aside.

In large bowl beat eggs, sugar and vanilla until light. Blend in melted chocolate then dry ingredients. Stir in green mint chips and chill for 10-15 minutes. Drop by well rounded teaspoonfuls onto ungreased cookie sheets. Bake 8-10 minutes; cookies will be soft in the centers and harden as they cool.
