Persimmon, Dates & Figs w/Arugula & Citrus Dressing
- 1 package 1 package baby arugula (~5 oz)
- 1-2 persimmons
- 15 dried dates
- 1 shallot or green onion
- 2 pieces cooked brown sugar bacon 🥓
- 1 fresh squeezed orange & zest 🍊
- 1 fresh squeezed lemon & zest🍋
- 1 T sugar
- 1 T olive oil
- Splash of apple cider vinegar & water
- salt and pepper to taste
This is best if you plate up each salad rather than in a big bowl. 🥗 Place a handful of arugula on a plate, then one round slice of persimmon (width of the fruit with the skin), then slice the dates & figs and the onion & bacon and place on top. Add citrus dressing, recipe below!
