Persimmon, Dates & Figs w/Arugula & Citrus Dressing

Ingredients

  • 1 package 1 package baby arugula (~5 oz)
  • 1-2 persimmons
  • 15 dried dates
  • 1 shallot or green onion
  • 2 pieces cooked brown sugar bacon πŸ₯“

Dressing

  • 1 fresh squeezed orange & zest 🍊
  • 1 fresh squeezed lemon & zestπŸ‹
  • 1 T sugar
  • 1 T olive oil
  • Splash of apple cider vinegar & water
  • salt and pepper to taste

Instructions

  1. This is best if you plate up each salad rather than in a big bowl. πŸ₯— Place a handful of arugula on a plate, then one round slice of persimmon (width of the fruit with the skin), then slice the dates & figs and the onion & bacon and place on top. Add citrus dressing, recipe below!

  2. Combine all ingredients in jar & shake!
