When I think of Butterball turkey I think of a delicious Thanksgiving dinner, but did you know Butterball has a wide variety of lean turkey sausages as well? Turkey sausage has 60% less fat than beef or pork sausages and they taste great! Turkey sausage also cooks quickly, so we’re talking about a quick, indulgent meal without all the guilt.
My family loved these turkey sausage, pepper and onion sandwiches so much and were delighted when we had enough left over for lunch the next day. I’ve never seen my kids devour cooked peppers so fast in their whole lives. It’s like they inhaled the dinner.
The sausage, pepper, and onion mixture would also taste great on top of pasta or eaten in a bowl like a stew. Enjoy!
Turkey Sausage, Pepper and onion Sandwiches
2 tablespoons extra-virgin olive oil
1 (13 ounce) package Butterball turkey dinner sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 medium onion, sliced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
3 garlic cloves, minced
2 tablespoons tomato paste
1 cup chicken broth
2 tablespoons cooking sherry (optional)
1 (15-ounce) can diced tomatoes
4 to 6 fresh sandwich rolls
Directions:
Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and saute for about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
Add the tomato paste and stir. Add the chicken broth, cooking sherry, and tomatoes. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
Cut the sausages into 1/2 inch to one inch medallions. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
Split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll. Fill the bottom half of the roll with sausage mixture. Serve immediately.
