These are our favorite cookies to make around Christmas time. They look festive and taste awesome. They are a gooey chocolate cookie with mint chips. They are fabulous, you should give them a try.
The recipe came from the back of Guittard green mint chips bag, I follow it exactly as written.
Polka Dot Cookies
Ingredients
- 2 cups semisweet chocolate chips
- ½ cup butter
- 1 ½ cups unsifted flour
- ½ teaspoon baking soda
- ⅛ salt
- 3 large eggs
- ½ cup sugar
- 2 teaspoons vanilla
- 2 cups Guittard green mint chips
Instructions
- Preheat oven to 350* F.
- In top of double broiler over low heat, melt semisweet chips and butter, stirring constantly until smooth. Set aside to cool. In small bowl combine flour, baking soda and salt; set aside.
- In large bowl beat eggs, sugar and vanilla until light. Blend in melted chocolate then dry ingredients. Stir in green mint chips and chill for 10-15 minutes. Drop by well rounded teaspoonfuls onto ungreased cookie sheets. Bake 8-10 minutes; cookies will be soft in the centers and harden as they cool.
