Lunch Box Idea: homemade pizza lunchables

Here is an embarrassing confession: I like pizza Lunchables. Yes, I realize they are “kid” food and that they are completely disgusting. That doesn’t stop me from liking them. I was excited when I found a recipe for a homemade version because these are a lot less money and they aren’t loaded with preservatives. Also, you aren’t limited to pepperoni or cheese pizza. Try them with fresh bell peppers, mushrooms, tomatoes, olives, spinach…whatever you like!

My son has come home from school the past few days begging for Lunchables so I made these last night and he was delighted. These really do taste close to the original, but better! Don’t forget to add a spoon to the lunchbox to spread the sauce!

Save these in a gallon sized freezer bag and keep them in the freezer until you’re ready to use them.

Homemade Pizza Lunchables


Ingredients:
2 1/2 – cups all purpose flour
1  teaspoon salt
1  cup warm water
1  tablespoon baking powder
4  tablespoons butter, softened
2 1/2 teaspoons yeast
pizza sauce
mozzarella cheese
cheddar cheese
Any other toppings you would like


Directions: 
Dissolve the yeast in warm water and set aside. Mix the flour, salt and baking powder together.

Add the softened butter and cut into the flour mixture using a pastry blender or fork. Add the yeast mixture and stir together to combine.

Knead the dough on a lightly floured surface until well blended. Separate dough into 18-20 golf ball size pizza dough balls. Set aside and let the dough rest for about 10 minutes.

Preheat oven to 400 degrees. On a floured surface roll out each pizza dough ball into a 5 inch circle.

Place place each pizza round on a pizza pan (brushed with olive oil) or baking stone. Bake for 8 minutes or until the bottoms are lightly brown.

Remove from oven and let cool before removing from pizza pan.

    i am so happy that you confessed to liking the pizza lunchables. because i totally do too! and i feel like i’m the only 26 year old out there that likes them and really i shouldn’t cuz they’re gross and for kids. but i used to always get them in jr high when we’d go on field trips and such and i totally still sneak one once in a great while, just for old times sake 😉ReplyCancel
