We just recently picked our apricot tree and found ourselves with more fruit than we could eat so I searched for a dinner that would use some of our crop. This one was so good! Sweet and savory and garlic-y. It was SO fast and easy too. Not much prep, not many pans or dishes to clean. It’s great all around!
Ingredients:
- Pat the pork chops dry with paper towels, and sprinkle both sides with salt and black pepper. Heat olive oil in a skillet over medium-high heat, and brown the chops well on both sides, about 3 minutes per side.
- Stir in chicken broth and garlic and then drizzle with honey and add apricots to the top, simmer until the pork is tender, about 8 minutes.
- Serve over brown rice.
