Apricot chicken is such an easy dinner to make! A perfect dinner for picky eaters.
This chicken is incredibly delicious and you only need four ingredients! Or just five ingredients if you choose to serve over rice (which I recommend). It’s so fast and makes a delicious sweet and savory chicken that your family will love. The prep time on this recipe is only 5 minutes, you just need to dump everything, mix it and add the chicken. My kids help me with this recipe, it’s that easy! This recipe makes a lot of chicken so we usually have leftovers for the next day. The leftovers are great on top of a salad or rolled in a tortilla. Enjoy!
Crock Pot Apricot Chicken

- 1 cup Russian dressing
- 1 envelope dry onion soup mix
- 5-6 chicken breasts
- In a medium bowl mix together the apricot preserves, dressing and soup mix. Add chicken to a crock pot and cover with sauce. Cover and cook on low for 3-4 hours. Shred chicken and serve on top of rice and drizzle with extra sauce.
