I love pot roast and this one did not disappoint. That is why I am daring to call it the best. It was melt-in-your mouth delicious and I loved the flavorful sauce. My son caught a glimpse of me adding a can of Pepsi to the Crock Pot and refused to eat the “Pepsi meat”, but once he tasted it he declared his love for Pepsi meat and wished we could eat it every dinner. It’s that good.
• 1 (3- to 4-pound) beef chuck roast
• 1 (12-ounce) can Coke (not diet)
• ¾ cup dark brown sugar
•1 cup Heinz Chili Sauce
• ¾ cup ketchup
•1 packet dry onion soup mix
• 4 to 5 potatoes, cut up
• 2 cups baby carrots
Whisk together Coke, brown sugar, chili sauce, ketchup and dry onion mix. Place roast in slow cooker and pour sauce on top. Cook on low 8 to 10 hours. Half way through cooking add potatoes and carrots, cover and continue to cook.
