Dice onion and green bell pepper.
Saute green bell pepper and onion in a quarter size amount of Extra Virgin Olive Oil. Heat through at a medium heat for 3-5 minutes until onions are translucent and peppers are soft. Put off to the side.
Cut sausage links into small bite size pieces. You could also prepare these burritos leaving the sausages whole but if you are preparing them for children you would want to cut them. Heat sausage through on skillet until all parts of the sausage are cooked through and no longer pink.
While preparing sausages scramble eggs. If you are looking to make your breakfast burritos even more protein dense you can omit some of the yolks.
Cut grape tomatoes in half. Dice turkey meat. My turkey meat was pre-cooked, make sure that you buy deli meat that has been fully cooked.
In a skillet Combine eggs, onion, peppers, sausage, turkey, and tomatoes. Heat through on skillet for one minute combining flavors. Add 1/4 C cilantro. If you are working on a low carb diet you could skip the tortilla and simply eat it like this, it is delicious! There is so much flavor in the sausage there is really no need to add any extra spices.
