My husband was a little unsure of the idea of pineapple salsa at first. He couldn’t wrap his mind around a juicy and sweet fruit like pineapple tasting good with crunchy red peppers, lime juice and jalapeños. I’m happy to say that once he tasted the salsa he changed his mind and loved it. We ate it on top of grilled chicken for a fast, healthy and delicious dinner. This pineapple salsa is so easy to make and it’s nearly fool proof. If you can chop and dice, you can make this. It only takes about 15 minutes to prepare and then some time in the fridge to let the flavors meld together. Eat this on chicken, fish, put it in tacos or fajitas or eat it with chips. I think this would be pretty dreamy in a fish taco. Yummmm! This is a great salsa to bring to a summer BBQ or potluck. You might want to double the recipe if you’re making it for a crowd. Pineapple Salsa
2 cups diced fresh pineapple
1/2 cup diced red bell pepper
1/3 cup chopped fresh cilantro
1/3 cup diced red onion
1 jalapeno, seeded and diced
2 limes salt and pepper
Directions:
Combine pineapples, bell pepper, cilantro, red onion and jalapeno to a bowl. Juice the two limes and pour over the other ingredients and gently stir. Salt and pepper to taste. Cover and refrigerate for at least an hour to let the flavors meld together.
