First of all I want to apologize for not having this post up this morning. I like to have my post up by 9a, but the internet was down last night and this morning. Thank you for your patience.
For those of you who LOVE pancakes, do I have a recipe for you! They are similar to pancakes, just thinner and made with egg. They are oh so good! My mom made them for my brother and I when we were little. I remember always asking for Egg Cakes as a child. She got the recipe from her mom. I can remember making them when I was just eight-years-old, and I’ve been making them ever since. ‘Tis the season for sharing and giving. So I’m going to give you this family recipe in hopes you and yours will enjoy Egg Cakes one morning soon.
In a mixing bowl add…
1 cup of flower
1 tablespoon of sugar
1 cup of milk
pinch of salt
table spoon of vegetable oil
Mix ingredients with a whisk until most of the lumps are gone. Then with a 1/2 cup poor mix into the pan on medium temp. You will begin to see bubbles rise to the surface after about a thirty seconds to a minute. Once you see a good amount of little bubbles throughout the egg cake check to see if it’s a golden
brown on the bottom. (Side note: the first 1-3 egg cakes will be white, not golden brown which is just fine.) Then flip the egg cake to the other side for another minute or two. Then serve with butter, syrup, eggs, orange juice and you’ve got yourself a delicious breakfast!
