Ground Turkey Vegetable Soup

It is Spring around here, but the weather has been a little chilly, so I have been craving soup. This one hit the spot and used ingredients I already had on hand. I love ground turkey for many reasons, but you can replace it with ground beef if you would like.

Ground Turkey Vegetable Soup

Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes
Servings 6


  • 2 garlic cloves minced
  • 1 lb lean ground turkey
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion chopped
  • 4 cups beef broth
  • 2 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tablespoon fresh basil minced
  • 2 tablespoons ketchup
  • salt and pepper to taste


  1. In a large stockpot brown the ground turkey over medium heat.
  2. Add the carrots, celery, and onion and saute for 5-7 minutes, or until the vegetables start to get tender.
  3. Add the remaining ingredients, reduce heat to low and simmer for 30 minutes.
