I made a huge Crock Pot full of this delicious 5 ingredient Salsa Chicken the other day and used it to make these chicken burrito bowls. They were so good and the best part is you can have all the ingredients set up buffet style so everyone can take what they want and leave what they don’t want.
Chicken Burrito Bowls
serves 4
2 cups cooked chicken, shredded (I used this super easy recipe for 5 ingredient salsa chicken)
2 cups rice, cooked
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
2 roma tomatoes, diced
1 small red onion, diced
1 avocado, diced
4 cups Romaine lettuce, shredded
(You can also top with additional toppings of your choice: cheese, bell peppers, green onions, cilantro, olives, jalapenos, sour cream, guacamole, salsa, etc)
Salad dressing of your choice (I used ranch)
Directions:
To make individual servings, layer 1/2 cup rice, 1/2 cup chicken, lettuce, black beans, corn, tomatoes, onions, avocados and any other toppings you choose. Drizzle with your favorite salad dressing. That’s it!
