  • 2 cups cherry tomatoes
  • 1 garlic clove
  • 1 green bell pepper small
  • 5 oz feta cheese
  • 1 cucumber English
  • ½ red onion
  • cup kalamata olives
  • mint leaves just a handful
  • 2 Tbsp parsley fresh
  • 2 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp dijon mustard
  • Salt and ground pepper to taste


  • Remove the tips of the cucumber and chop it into half moons.

  • Chop cherry tomatoes into halves and onion into thin slices.
    Chopped veggies
  • Chop the green bell pepper into bite-size pieces and mince garlic.
  • Chop feta cheese into cubes or crumbled.

  • Whisk ingredients of the dressing and toss the salad with it.
