Easy and Healthy Lentil Vegetable Soup
Healthy lentil vegetable soup is full of flavor and easy to make. Everyone will love this filling, gluten free and vegetarian soup.
- 1/4 cup olive oil
- 1 onion chopped
- 1 1/2 cups carrots chopped
- 2 celery stalks chopped
- 3-4 cloves minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 2 bay leaves
- 1 (14.5 oz) can crushed tomatoes
- 2 cups dry lentils
- 8 cups vegetable broth or chicken broth
- 1 cup thinly sliced spinach
- 2 Tbsp vinegar
- 1/2 tsp salt
- ground black pepper to taste
In a large stock pot, heat olive oil over medium high heat.
Add onion and sauté 3-4 minutes or until onions are translucent.
Add carrots, celery and garlic and sauté for an additional 3 minutes.
Add oregano, basil and bay leaves and stir.
Add lentils, broth and tomatoes. Bring to a boil. Reduce heat, and simmer for 1 hour.
When ready to serve stir in spinach and vinegar, and season to taste with salt and pepper.
Remove bay leaves and enjoy!
