Ingredients

  • 1/4 cup olive oil
  • 1 onion chopped
  • 1 1/2 cups carrots chopped
  • 2 celery stalks chopped
  • 3-4 cloves minced garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 bay leaves
  • 1 (14.5 oz) can crushed tomatoes
  • 2 cups dry lentils
  • 8 cups vegetable broth or chicken broth
  • 1 cup thinly sliced spinach
  • 2 Tbsp vinegar
  • 1/2 tsp salt
  • ground black pepper to taste

Instructions

  • In a large stock pot, heat olive oil over medium high heat.
  • Add onion and sauté 3-4 minutes or until onions are translucent.
  • Add carrots, celery and garlic and sauté for an additional 3 minutes.
  • Add oregano, basil and bay leaves and stir.
  • Add lentils, broth and tomatoes. Bring to a boil. Reduce heat, and simmer for 1 hour.
  • When ready to serve stir in spinach and vinegar, and season to taste with salt and pepper.
  • Remove bay leaves and enjoy!
