Disneyland Peanut Butter Bars

Disneyland peanut butter bars are a peanut butter chocolate lovers best friend. This recipe is no bake which makes it fool proof. This peanut butter goodness is a party pleaser!

Ingredients

  • 2 C Peanut Butter
  • 2 tsp Vanilla
  • 8 Tablespoons Salted Butter softened
  • 3-4 C powdered sugar Test the stiffness of the dough before decided what works best for you. you want it moldable but not sticky.
  • 4 Tablespoons Shortening
  • 10-12 graham cracker sheets
  • 4 C Chocolate chips I used milk chocolate
  • 1/4 C Crushed Peanuts

Instructions

  • Start with a dish that is deep. I used a 7"x10", but you could use a 9"x9" just as well. Your amount may vary a bit depending on how deep you want the dessert and the size of your pan. Spray your pan with non-stick cooking spray. Line your pan with wax paper or foil. Spray the the liner you use before you begin layering.
  • Combine Peanut butter, vanilla, butter, and 2 cups of powdered sugar. Test your mixture to see how your dough is coming together. You want it to be moldable, not crumbly, and not sticky. Add a quarter cup of powdered sugar at a time until the mixture becomes moldable without being sticky. Mine was about 3.25 C of powdered sugar.
  • Prep your chocolate by combining your chocolate chips and shortening in a microwave safe bowl. Only heat your chocolate 30 seconds at a time in the microwave and stir in between making sure to not overcook your chocolate. You want it to be smooth and spreadable.
  • Start your layering process with a layer of graham crackers.
  • Spread 1/3 of chocolate over the first layer. Keep in thin, but cover the entire surface.
  • Take handfuls of your peanut butter mixture and flatten it out in your hand and make a pancake. Put the peices together as best you can on top without smashing the cracker layer underneath.
  • Add another layer of melted chocolate to the top of the peanut butter. Layer again with graham crackers. Spread the remaining chocolate on top.
  • Finish with crushed peanuts.
    Cool in the refrigerator to set for one hour. This makes 12 LARGE bars. (That could easily be shared). Store in the fridge. Don't want your bars as thick? You can easily cut this recipe in half for a smaller portion or smaller pan.
