Ingredients

  • 8 oz Boneless Beef 1-1.5 inch pieces
  • 1-2 tsp fresh ginger minced
  • 1-2 cloves garlic, minced
  • 4 green onion cut in half lengthwise and cut into 3 inch pieces
  • 2-3 C Bok choy chopped
  • 12 oz fresh, flat rice noodles separate the noodles as much as possible before adding to the pot
  • 4 Tbl low sodium soy sauce
  • Salt and Pepper to taste
  • 2 tsp Mirin or other sweet cooking wine
  • 2-3 full size carrots, sliced thin
  • 2 C fresh broccoli, chopped
  • 3-4 Tbl Hoisin Sauce
  • 2 Tbl Hot Kalbi Korean BBQ, this is optional and will make the dish somewhat hotter, but it is delicious! If you don't add this, add a chili pepper sauce, siracha, or sweet and sour sauce.
  • 4 Tbl Sesame Oil (you split this for different portions of preparing the meal.)

Instructions

  • In a large skillet, using medium high heat, coat the pan with a tablespoon with sesame seed oil. Add thinly sliced beef and cook until browned. I like mine a little blackened, but prepare yours to your preference. Remove beef out of hand and let sit on a dish while you prepare the rest. Boil a pot of water for the rice noodles while you are prepping the vegetables. 
  • Turn down heat to medium. Add a tablespoon of sesame seed oil to pan, adding minced garlic and ginger. Add sliced carrots allowing carrots to cook through on both sides for about five minutes. Add broccoli, keep broccoli in the pan with the carrots and cook for an addition 3-4 minutes. Add cabbage to pan and make sure it has time in direct heat with the broccoli and carrots pushed to the side. Add bok choy. 
  • Put rice noodles in pan of boiling water, and prepare according to packaging. Typically, this can take about 5 minutes or so. After you pull the noodles out of the boiling water, strain them and give them a cold water rinse to stop the cooking process. (If your other portion of the meal isn't prepared yet. If you can time it right you can bring them all together. If you have to wait add a little sesame seed oil to the noodles to keep them from sticking to each other.
  • In the pan preparing the vegetables, turn the heat back to high. Add cooking wine, flat (rice) noodles, tablespoon of sesame oil, soy sauce, hoisin, kalbi, salt,pepper and beef. Cook on high until combined, only a couple of minutes. 
    Add chopped green onion as a garnish. Serve immediately.
