Ingredients
2cupscherry tomatoes
1garlic clove
1green bell peppersmall
5ozfeta cheese
1cucumberEnglish
½red onion
⅓cupkalamata olives
mint leavesjust a handful
2Tbspparsleyfresh
2Tbspolive oil
2Tbspred wine vinegar
1Tbspdijon mustard
Salt and ground pepper to taste
Instructions
Remove the tips of the cucumber and chop it into half moons.
Chop cherry tomatoes into halves and onion into thin slices.
Chop the green bell pepper into bite-size pieces and mince garlic.
Chop feta cheese into cubes or crumbled.
Layer all the ingredients of the salad in a big bowl.
Whisk ingredients of the dressing and toss the salad with it.
Serve the salad in individual bowls and enjoy it immediately.

Tips:
This salad is best while fresh, anyways, leftovers last in the fridge for up to 3 days.
If wanting a high-carb salad, add some cooked quinoa.
