HEALTHY LENTIL VEGETABLE SOUP RECIPE

What you need :

– 1/4 cup olive oil – 1 onion chopped – 1 1/2 cups carrots chopped – 2 celery stalks chopped – 3-4 cloves minced garlic – 2 teaspoons dried oregano – 2 teaspoons dried basil – 2 bay leaves – 1 (14.5 oz) can crushed tomatoes – 2 cups dry lentils – 8 cups vegetable broth or chicken broth – 1 cup thinly sliced spinach – 2 Tbsp vinegar – 1/2 tsp salt – ground black pepper to taste

– In a large stock pot, heat olive oil over medium high heat.

– Add onion and sauté 3-4 minutes or until onions are translucent.
