I use sour cream instead of milk. Imparts a nice tangy accent. I also use dried thyme – another great flavor enhancer. Shredded Cabot extra sharp cheddar is my favorite ingredient for scrambled eggs — SCRAMBED — not omlets!

This is how I make mine. To get them really fluffy, I beat them to death with an old fashioned hand egg beater. Really airy and also gives you a good workout. I’m old school, 74 years old.Â

I use an electric whisker and coconut milk. Unsalted butter in the pan. Don’t salt the eggs till they are on the plate. Salt any earlier will make the eggs harden. Add shredded sharp cheddar in the pan for the best flavor.Â
I make fluffy scrambled the same accept I use 1/2 & 1/2, don’t need to whip as hard abd then j microwave the bowl of eggs mixture for approx 5 to 6 minutes depending on micro power. If still some watery mixture at bottom, just blend for a bit. The eggs continue to cook quickly. Add extras midway through if desiredÂ
I use 1/2 & 1/2 onstead of milk, less whipping needed and microwave for 5 min or so depending on my power.  I never fry eggs anymoreÂ
