Roasted Red Pepper Pesto with Kale and Feta

I was searching the internet for vegetarian recipes and stumbled upon this one. The idea of using a roasted red pepper pesto on pasta instead of a tomato based sauce intrigued me. The ingredients sounded great together and the picture looked lovely and it did not disappoint. The pesto is fresh and flavorful and great on its own, but paired with the salty feta, colorful kale, and crunchy toasted walnuts you have one fabulous dish. Kudos to A Couple Cooks for a delicious recipe.

Ingredients:

  • 2 red bell peppers
  • 12 sundried tomatoes packed in oil
  • 1 tablespoon olive oil
  • ½ cup walnuts
  • ½ teaspoon salt
  • 1 bunch kale
  • 1 tablespoon olive oil
  • 1 pound whole wheat linguine
  • ½ cup walnuts
  • Feta cheese for topping

 

Directions:

  1. Preheat the oven to 450 degrees. Place the peppers on a cookie sheet and put in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 15  minutes, or until the peppers are cool enough to handle. Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds.
  2. In a food processor or blender, combine roasted red peppers, 12 sundried tomatoes packed in oil, 1 tablespoon olive oil, ½ cup walnuts, and ½ teaspoon  salt. You may need to add one more tablespoon of oil to get it to your desired consistency.
  3. Prepare the pasta according to the package directions.
  4. Wash and chop the kale. In a large skillet, heat 1 tablespoon olive oil . Add the kale, then saute until bright green. Add a pinch of salt.
  5. In a dry skillet, toast about ½ cup walnuts over medium heat, stirring often, until the nuts are fragrant and toasted about 3 to 4 minutes (be careful that they do not burn).
  6. When the pasta and kale are done, add the kale to the pasta. Mix as much pesto as desired into the pasta. Top with toasted walnuts and feta.
