Protein Packed Breakfast Burrito

Easter morning has always been a time to celebrate together as family. We love serving a meal that will satisfy and yet be quick enough that we are not spending the entire day in the kitchen. This year we will be hosting a family brunch and I want something that is delicious, healthy, and kid friendly. This protein packed breakfast burrito fit the bill perfectly as they are easy to prep for and could even be prepped the night before if you are looking to throw ingredients together within a moments notice. I love the flavor that the Johnsonville sausage adds to this recipe, it is bold and marries the flavors perfectly without requiring a huge fuss in the kitchen.

I am using the original Johnsonville Original recipe breakfast sausage because I know it comes with plenty of flavor that I will not need to add extra spices to the dish.

If you have early morning church you could prep the ingredients beforehand or if you have early afternoon church like us this would be a meal that would keep you full all through the afternoon.

Early prep could include:

Dicing the green bell pepper, onion, turkey and tomato.

Cutting sausage into smaller pieces.

Protein Packed Breakfast Burrito

These protein breakfast burritos are so healthy and filling! They will satisfy even the hungriest guest.

Ingredients

  • 8 ten inch flour tortillas or make your own paleo recipe here
  • Cooking oil of your choice I like Extra Virgin Olive Oil
  • 1 package Johnsonville original sausage
  • 1 dozen eggs
  • 1 green bell pepper optional red or yellow bell peppers
  • 1 medium sized onion
  • 1/2 lb Turkey breast cubed
  • Salt and Pepper to taste
  • grape tomatoes cut in half
  • 1 c cheddar cheese
  • 1/2 C Spinach
  • small bunch of cilantro for flavor and garnish
  • optional: bacon cooked and crumbled I made mine without, sour cream, guacamole,

Instructions

  • Dice onion and green bell pepper.
  • Saute green bell pepper and onion in a quarter size amount of Extra Virgin Olive Oil. Heat through at a medium heat for 3-5 minutes until onions are translucent and peppers are soft. Put off to the side.
  • Cut sausage links into small bite size pieces. You could also prepare these burritos leaving the sausages whole but if you are preparing them for children you would want to cut them. Heat sausage through on skillet until all parts of the sausage are cooked through and no longer pink.
  • While preparing sausages scramble eggs. If you are looking to make your breakfast burritos even more protein dense you can omit some of the yolks.
  • Cut grape tomatoes in half. Dice turkey meat. My turkey meat was pre-cooked, make sure that you buy deli meat that has been fully cooked.
  • In a skillet Combine eggs, onion, peppers, sausage, turkey, and tomatoes. Heat through on skillet for one minute combining flavors. Add 1/4 C cilantro. If you are working on a low carb diet you could skip the tortilla and simply eat it like this, it is delicious! There is so much flavor in the sausage there is really no need to add any extra spices.

lay out tortilla, spread a thin layer of guacamole on tortilla.  Scoop 1/2 cup of mixture onto tortilla, sprinkle with cheddar cheese, add a layer of spinach and roll into a burrito.

Repeat until you have a pan full of rolled burritos.

For a little extra flare I added a bit of butter on top of each burrito to brown underneath the broiler for 3-4 minutes. (Keep an eye on this as it can brown quickly!)

Add extra cilantro for garnish, salsa, & sour cream!
