Using an instant pot to prepare artichokes is so much faster and instant Pot artichokes turn out perfect every time. No mushy artichokes here!
Artichokes look a little intimidating, but they actually aren’t hard to make at all, especially if you use an Instant Pot. They only take about 20 minutes in the Instant Pot versus 40-45 minutes on the stove or oven. I love that the Instant Pot is faster, but also takes away any guess work because it has a timer right there to let you know when things are done. I love my Instant Pot! How do I eat an artichoke?
Knowing how to eat an artichoke might be as intimidating as knowing how to cook one! One awesome thing about artichokes is that they are high in antioxidants, fiber, folate and vitamin C. These flowers (yes, they are flowers!) are a tasty nutrient powerhouse. So now that you know that eating them is good for you, let’s talk about how to eat it.
After steaming the artichoke, pull off the petals and only eat the fleshy white part and discard the rest. I like to dip petals in melted butter before eating them, but there are many different options for delicious artichoke dips.
The easiest way to eat the fleshy part of the petal is to bite down with your front teeth and pull the petal out, scraping all the edible part off the petal. As you get closer to the heart, the petals get a little easier to eat and you probably won’t have to much scraping with your teeth.
Keep eating the petals until you get the fuzzy part. Don’t eat the fuzz. That wouldn’t be fun. Scrape away all the fuzz and what you’re left with is the artichoke heart. It is meaty and delicious.
Instant Pot Artichokes
Ingredients
- 2 large artichokes
- 1 cup cold water
Instructions
- Wash artichokes in cold water and then cut stems off each artichoke.Â
- Add water to Instant Pot and place artichokes on steamer rack inside the instant pot. Close lid and turn valve to pressure.
- Cook high pressure for 9 minutes and then quick release when timer is done.Enjoy immediately dipped in melted butter.
