Carrot Cake pops

Carrot cake pops   Easter is a little bit different now that we live in Alaska. Most people are celebrating Spring and the beautiful new flowers and leaves on the trees. Here in the North Pole we have snow on the ground until May so we celebrate Easter in a winter wonderland. We do celebrate that the days are getting longer and Spring is right around the corner and all the snow doesn’t stop us from enjoying an Easter egg hunt. IMG_1020 It does look a little different because we have to bundle up from head to toe, but the kids still have fun tromping through the snow and trees to find colorful eggs full of candy. Easter candy makes everything better, right!? This is my favorite time of year because the candy is so amazing! I’m pretty sure Reese’s Peanut Butter Eggs and Cadbury Mini Eggs Candy can make anyone have a better day. IMG_0999IMG_0910     One bonus to all the snow is that it makes hiding Easter eggs super easy. All you have to do is throw them all in the air and they plop in the snow perfectly hidden from egg hunters. I have a great recipe for carrot cake pops for you. We love that cake pops can be made many different ways. The different colors and additions can make them festive for any holiday. These cute carrot shaped pops are perfect for Easter or even spring time and the best part is they use Hershey’s Kisses Carrot Cake Candies to make them taste even more like a delicious carrot cake. carrots real

two carrotsWhat you will need to make carrot cake pops:

    • Carrot cake mix
    • cream cheese frosting
    • Hershey’s Kisses Carrot Cake Candies
    • Twizzlers Green Apple Easter Grass Candy
    • lollipop sticks

Carrot cake pops

Serves: 30-40 cake balls
Ingredients
    • carrot cake box mix
    • 1 (16 ounce) cream cheese frosting
    • 1 (9 ounce) bag of Hershey’s Kisses Carrot Cake Candies
    • Twizzlers Green Apple Easter Grass Candy
    • lollipop sticks
Instructions
    1. Bake carrot cake according to package directions. Cool completely and then crumble into a large bowl.
    1. Using your hands (or a large spoon) mix the frosting into cake crumbs. Start by using about 2/3 of the frosting in the can and then add more if needed.
    1. Roll cake mixture into quarter size balls, shape balls into a triangular carrot shape (they do not need to be perfect) and place on cookie sheet covered with wax paper.
    1. Melt Hershey’s Kisses Carrot Cake Candies in the microwave in 30 second intervals, mixing candies after each interval. Pour melted chocolate in a tall, skinny cup.
    1. Dip the tip of a lollipop stick in a little of the melted Hershey’s kisses and insert into the cake balls. s.
    1. Place them in the freezer for about 15 minutes to get firm.
    1. Once firm, carefully insert the cake ball into the melted candies by holding the lollipop stick and rotating until covered. If you pour the melted chocolate into a tall cup it will make this step much easier! Once the cake ball is covered remove and hold the covered carrot above the cup and let the excess chocolate drip off for for a bit. Then tap and rotate until the excess chocolate falls off. Be gentle because the cake ball will fall off if you’re too rough.
    1. Place on wax paper to dry.
    1. Once dry, add Twizzlers Green Apple Easter Grass Candy to the tops of the carrots and drizzle with additional melted Hershey’s kisses carrot cake candies to look like lines on the carrots.
    1. I like to refrigerate until ready to serve, but that is optional.
