Next let me say, I love Valentines day! It’s one of my favorite holidays. I love the frills, hearts and the true sentiments of sharing love with others. We usually do a special dinner from lobster to shrimp and have fondue to accompany it. I include our daughter in the planning and it makes for a romantic family dinner to be enjoyed by all.
This year, we will still do the fondue- but we’ve added a gluten free component to our lifestyle. That got me to thinking ahead. We’re also having a Valentine’s Party for our daughter that day, so what would be better than Valentine Cupcakes? I wanted to work on a recipe in advance. So I experimented with using Pamela’s Pancake & Baking mix, strawberries and Pamela’s vanilla icing. They turned out delicous!
