I like spaghetti squash. No, scratch that, I LOVE it. It makes a great side dish or it is the perfect gluten-free substitute for pasta. I have posted a few spaghetti squash recipes here on the blog–Roasted spaghetti squash with meatballs and Roasted spaghetti squash with tomato garlic sauce.
While I love a good roasted spaghetti squash I don’t always have enough time for it (roasting the squash takes about an hour). So here is a super easy and much faster way to prepare a spaghetti squash.
Microwave Spaghetti Squash
1 spaghetti squash (3-4 lbs)
2 teaspoons olive oil
pinch of salt
pepper to taste
1/4 cup water
Directions:
1. Cut spaghetti squash in half and remove all the seeds.
2. Drizzle the inside of the squash with olive oil and rub to cover the inside of the squash. Sprinkle with salt and pepper.
3. Place squash halves, cut sides down, in a microwave-safe baking dish; add the 1/4 cup water. Microwave, covered, on high for 15 minutes. Or until tender. Cool slightly and separate strands of squash with a fork. (I have found that my squash seem to fit a little better in my Pyrex pie plate instead of my 8×8 pan…if that helps)
