Veggie loaded spaghetti sauce

I wanted to title this recipe “cheater spaghetti sauce” because all I really do is take a jar of spaghetti sauce and fancy it up. I’m going to write down what I add to the spaghetti sauce, but the beauty of this recipe is that you don’t really need a recipe at all. Add what veggies you like and make it as chunky as you want. I love to add a lot of veggies because I like chunky sauce and my kids will eat tons of veggies without complaining.

Veggie Loaded Spaghetti Sauce

2 small zucchinis; diced

2 small yellow squash; diced

1 small onion diced

1 bell pepper diced

4 oz. sliced mushrooms

1 Tablespoon olive oil

1-2 jars of spaghetti sauce (I used two 24 oz Prego sauces)

1. Add the olive oil and diced veggies to a frying pan, saute until tender. Add spaghetti sauce and heat through.

 

I’m adding this recipe today because it is my son’s fourth birthday and this is the dinner my kids always request on their birthday. My sweet Sam was the happiest baby I’ve ever known and is an even happier preschooler.
