It is Spring around here, but the weather has been a little chilly, so I have been craving soup. This one hit the spot and used ingredients I already had on hand. I love ground turkey for many reasons, but you can replace it with ground beef if you would like.

Ground Turkey Vegetable Soup

Ground Turkey Vegetable Soup

Ingredients

  • 2 garlic cloves minced
  • 1 lb lean ground turkey
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion chopped
  • 4 cups beef broth
  • 2 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tablespoon fresh basil minced
  • 2 tablespoons ketchup
  • salt and pepper to taste

Instructions

  • In a large stockpot brown the ground turkey over medium heat.
  • Add the carrots, celery, and onion and saute for 5-7 minutes, or until the vegetables start to get tender.
  • Add the remaining ingredients, reduce heat to low and simmer for 30 minutes.
