Fall is here and I can’t think of a better way to celebrate than eating some pumpkin flavored anything! The trouble is that pumpkin pie can be hard to come by or fill you up with way too many calories to get that pumpkin fix! For a limited time Yoplait is offering seasonal flavors of Yoplait at Walmart! So whether you are looking for a quick whipped yogurt or an apple crisp yogurt; Walmart has you covered. This yogurt really hits the spot, but if you’re looking to take it a step further I came up with this banana pumpkin cake to give you a healthier snacking option before you reach for the closest pie!

I thought it would be fun to take a fun spin on the classic banana bread and add a little flavor of pumpkin, cinnamon, and chocolate chips. This was super fun and easy to whip up and my daughter loved making it with me in the kitchen. This cake comes out tasting super moist and delicious with a lot less calories that a traditional pumpkin pie would have. You’re welcome! 🙂
Banana Pumpkin Cake, pumpkin, fall, fall treats, yoplait, mymommystyle
Ingredients:
6.75 ounces all-purpose flour (about 1 1/2 cups)
1/3 cup sugar or Agave Syrup
1 teaspoon baking powder
1 teaspoon baking soda
1-1.5 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup yoplait light pumpkin yogurt
3/4 cup mashed ripe banana (about 1 medium)
1/4 cup canola oil
1 teaspoon vanilla extract
1 large egg, lightly beaten
Cooking spray
Optional:
1/2 cup frozen fat-free whipped topping, thawed
roasted pecans/walnuts
chocolate chips

 

Directions:

1. Preheat oven to 375°.

2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 5 ingredients (through salt) in a large bowl; stir with a whisk. Make a well in center of flour mixture.

3. Combine yogurt, banana, oil, vanilla, and egg in a small bowl; stir until well blended. Add yogurt mixture to the flour mixture in large bowl, stirring just until moist.

4. Pour the batter into a 9-inch square metal baking pan coated with cooking spray. Bake at 375° for 20-22 minutes or until a fork can be inserted in the center and comes out clean. Cool cake in the pan 10 minutes on wire rack; remove from pan. Cool completely on wire rack. Serve with whipped topping.
