It is Spring around here, but the weather has been a little chilly, so I have been craving soup. This one hit the spot and used ingredients I already had on hand. I love ground turkey for many reasons, but you can replace it with ground beef if you would like.

Ground Turkey Vegetable Soup
Ingredients
- 2 garlic cloves minced
- 1 lb lean ground turkey
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion chopped
- 4 cups beef broth
- 2 14.5 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 1 cup frozen peas
- 1 cup frozen corn
- 1 tablespoon fresh basil minced
- 2 tablespoons ketchup
- salt and pepper to taste
Instructions
- In a large stockpot brown the ground turkey over medium heat.
- Add the carrots, celery, and onion and saute for 5-7 minutes, or until the vegetables start to get tender.
- Add the remaining ingredients, reduce heat to low and simmer for 30 minutes.
