Pumpkin Chocolate Chip Cookies

As soon as the air outside gets a little bit cooler I automatically want to start throwing pumpkin into everything I bake. That’s not all that weird or uncommon since this is when pumpkins are in season, but still, my mouth doesn’t water when I think of pumpkin goodies any other time of the year.

I was so excited to make pumpkin cookies the other night, therefore making my kids super excited for cookies as well. They were deeply disappointed though when I pulled the first delicious batch out of the oven, they thought the cookies would look more like jack-o-lanterns. Oh well, it just meant more delicious puffy cakey pumpkin cookies for me.

I wrote this recipe down a long time ago and can’t find the original place I found it, so I don’t have anyone to give credit for this delicious recipe.

Pumpkin chocolate chip cookies

  • 1 1/2 cup sugar
  • 3/4 cup oil
  • 1 egg
  • 1 cup canned pumpkin
  • 2 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup chocolate chips

Preheat oven to 400 degrees.

Using a mixer, beat the sugar and oil. Beat in the egg, then mix in the vanilla and pumpkin. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon. Slowly beat the flour mixture into the batter . Stir in the chips. Scoop the cookie dough by heaping tablespoons onto prepared cookie sheets and bake for 10-12 minutes, or until the cookies are browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.
